11th Annual Montana BBQ Cook-Off

Every year around this time the town of Absarokee is flooded with barbecue lovers and enthusiasts.

"We are the most established, original barbecue competition in the state of Montana," says Event Coordinator Nick Morrison.

Twenty-six teams turn up the heat by grilling some of the state's most mouth-watering BBQ. One of those is Next Level BBQ, coming to Absarokee from Big Timber. Melissa Cowell explains what goes into some great grilling.

"Spices, texture, you have to have lots of flavor, but still be able to taste the meat," says Cowell.

It is her unique style of barbecuing that won her the grand championship of barbecue just three years ago.

"We do cupcake chicken. We put chicken in a cupcake pan and a lot of people don't do that. And I do mine hot and fast, not slow and low," says Cowell.

And this year, it's the barbecue's first time as a sanctioned professional event with the Kansas City BBQ Society.

"Its grown exponentially in the last two years, so were hoping to maybe bump it up even more one step next year, but were probably going to run out of town here really quick," says Morrison.

Morrison says the barbecue is a way to give back to the community of Absarokee and provide some good old family fun.
