Spicy Lamburgers

To make the Raita, you'll need:

1 cup low-fat yogurt, plain
1/2 medium cucumber, peeled, seeded, and finely diced
2 green onions, very thinly sliced
1/3 cup cilantro, chopped
1 tsp. ground cumin
1/2 tsp. ground ginger
salt and pepper to taste

Combine all of the ingredients in a glass bowl. Mix well, taste for seasoning, and cover with plastic wrap and store in the refrigerator until ready to use.

To make the Lamburgers, you'll need:

1 pound ground lamb
1 tsp. ground cumin
1 tsp. ground coriander
1/2 tsp. ground ginger
1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
Pinch of cayenne
Salt and Pepper to taste
2 Whole Wheat Pita bread, cut in half.

Combine the spices and gently knead into the lamb. Salt and pepper. Divide the meat into 4 portions and shape into patties. Grill the lamburgers over medium high heat, either in a grill pan on the stove or on your outdoor grill. 4 minutes on each side for medium rare, 5 to 6 minutes for medium and 8 minutes for medium well.

Tuck each burger into a pita half and dress with a generous helping of raita.
