8 oz. semisweet chocolate
1/2 cup unsalted butter
4 egg yolks
4 whole eggs
1/4 cup all-purpose flour
1/4 cup sugar
1 Tbsp. cold espresso or strong coffee
1/2 tsp. vanilla extract
1/2 tsp. powdered chile (your choice)
whipped cream for topping
strawberries, sliced for garnish

Melt the chocolate with the butter over low heat and set aside.

Whisk together egg yolks and whole eggs until smooth and frothy. Then whisk in the chocolate, incorporating it well.

Combine the flour, sugar, and powdered chile and add to the chocolate and egg mixture. Add the espresso or coffee and vanilla and combine well.

Butter 4 6-ounce ramekins really well and divide the batter evenly among them. Place ramekins on a baking sheet and bake for 12 minutes in a 400 degree oven.

When slightly cooled, invert the ramekins onto dessert plates. The center will be soft and slightly runny. Top with whipped cream and garnish with sliced strawberries.
