Easy Enchiladas

BILLINGS - It's Cinco de Mayo and if you need a quick and easy, festive meal for the occasion all you need is five minutes. We met with 'Dos Machos' Kitchen Manager Kyle Watson to see just how easy it is to make enchiladas.

6" corn tortillas dipped in hot canola oil
Use 1 ¾ ounces pre-cooked meat per tortilla.
Season the meat with taco seasoning.
You can use chicken, shredded beef or just cheese.
About 2 ounces of enchilada sauce per enchilada.
Put shredded cheese on top.
Bake for five minutes in the oven.

And that's the easiest way to make an easy enchilada but if you have more time you can add lettuce, tomato, sour cream, olives and even green chiles.

If you don't want to cook, 'Dos Machos' will have food and drink specials throughout the day on Tuesday.
